How do i remove software that came on my phone?

i have a bunch of crap i don't want on my pantech duo that came with it, att mall, att music etc. etc. its running windows mobile 6.1 and these don't show up in remove programs list. does anyone know a way to do this? i had windows mobile 5.x before and i found a way by deleting some values in the registry, but i had to use some kind of program to unlock sys files. any info would be appreciated
